Dining out in Puglia is a real treat, and the quality is almost always high, thanks in large part to the excellence of the region's locally-produced, flavour-filled ingredients. Most restaurants serve classic Puglian cuisine in all its many guises, but you will occasionally come across dishes or inspirations from other parts of Italy and further afield.
